Course Objectives: The participant will be enabled to implement Principles/ Requirements of HACCP/ FSMS as per ISO 22000 International Standards and can carry out risk based audit as per ISO 19011 international standards effectively and efficiently. The course details are:

Part-I  IS0 22000 / HACCP – FSMS Policy, Safe product Realization, Principles of HACCP, Process identification and Process mapping of Food Chain and Food processing, Hazard Analysis, PRP, Identification of CCP, OPRP, HACCP Plan, Verification Plan and Validation of FSMS, Emergency Response Plan, Control of Non-conforming product, Product withdrawal etc.

Part-II ISO 19011 –Guidelines for management system audit : Objectivity of auditing / Audit Strategy ,First party, Second Party and Third Party , Formulation of Audit Criteria, Competence of auditors, Roles and Responsibilities of Auditors , Quality and Personal Attributes of Auditors ,Knowledge & Skills of Auditor , Document Review, Application of audit techniques,  Phases of audit, Preparation of Audit, Design Audit Checklist, Audit Plan & Schedule , The way of communication during audit, Process based audit, Audit execution, Categorization of Findings (Non-compliance, Discrepancy, etc) Writing audit evidence, Root cause analysis and Corrective and Preventive action , and Writing final audit report including Opportunities for improvements etc.
